recipe: frittata


Something new to try for the week - an easy brunch recipe - frittata's!

Ingredients:

10 eggs (use only 5 yolks).
Sliced red papper, halved cherry tomatoes, chopped asparagus, onion, mushrooms, any veggie you prefer really!
If you are a meat eater, ham, turkey bacon, regular bacon pair well with the vegetables.
Garlic, scallions, either or 1 tbsp of extra virgin olive oil.

Directions:
Pre-heat oven to 400 degrees.
Heat olive oil, minced garlic, and chopped scallion on medium, in non-stick cast iron skillet in stovetop (preferably one that can go from stovetop to oven)
Add selected meat, crisp up, then add selected chopped veggies.
Once veggies and meat are cooked to preference (usually around 5 minutes to soften) add eggs and cook for 5 minutes until eggs start to appear omelet-like.
Add entire skillet to oven to cook remainder of frittata in oven. 8-10 minutes.
Remove from over, and cool for just a minute, serve in skillet

recipe: pan-fried butter & thyme scallops


Recipe: Pan-fried butter & thyme scallops

2 teaspoons olive oil
20g butter
1 clove garlic, crushed
2 teaspoons finely chopped thyme leaves
12 scallops, roe on, on the half shell
2 tablespoons lemon juice
1 tablespoon chopped chives

Heat a medium frying pan over high heat; add the oil, butter, garlic and thyme and cook for 1 minute; remove the scallops from the shells, reserving the shells; add the scallops to the pan and cook for 30 seconds each side; place the cooked scallops back in the shells; add the lemon juice to the pan and cook for a further minute, then add the chives; spoon the pan sauce over the scallops; serves 4

hungry for more



Stumbled across this lovely blog, What Katie Ate. I'm madly in love with her posts and I've learnt so much in less than half an hour. Found amazing recipes; lamb shank with rosemary and red wine, chocolate truffle cake, and macaroni cheese (always wanted to try making but never did) and did a lil' refresher course on my sushi etiquette knowledge!
